400 gr langkorrelige rijst (zoals Surinaamse) – 2 el olie – 1 ui – 2,5 cm kaneelstok – 2 laurierblaadjes – 8 kardamompeulen – 5 kruidnagelen – 1-2 tl zout – 250 gr gemengde groenten (bv courgette, aubergine, bloemkool, snijbonen, paprika) – 1 tl ketoembar – 1 tl garam masala – ½ tl tarmeriek – 1 tl chilipoeder – peper en zout- ca 8 dl water
De ui fijn snijden en fruiten in de olie. Voeg kaneel, kruidnagel, kardamom en laurier toe en fruit 1 min mee. Voeg de gemengde groenten toe en bak 3-4 min mee. Voeg daarna de rijst toe, bestrooi met ketoembar, garam masala, tarmeriek, chili en zout, roer goed door en giet er water op. De rijst moet ca 2 cm onder staan. Breng aan de kook, laat op laag vuur 10-15 min zachtjes doorkoken. (kijk naar de kooktijd op de verpakking van de rijst). Het water moet helemaal zijn opgenomen als de rijst gaar is.
Serveer met bv chutney, chapati.
