600 gr uien – 1 t knoflook – 50 gr boter – 50 gr bloem – 8 dl bouillon – 2 dl trappistbier dubbel – peper en zout – 8 sneetjes stokbrood – 100 gr oude kaas
Pel de uien en snij in halve ringen. Bak de uien op laag vuur in de boter tot ze goudgeel zien (ca 30 min) roer af en toe. Voeg de bloem roerend toe en laat 1 min garen. Voeg dan goed roerend de bouillon in delen toe. Breng de soep aan de kook en laat 10 min zachtjes koken, af en toe roeren. Roer de bier door de soep en breng op smaak met peper en zout.
Verwarm de oven voor op 200o C of zet de grill op de hoogste stand. Schep de soep in 4 kommen en leg in elke kom 2 sneetjes stokbrood. Bestrooi met de geraspte kaas, zet in de oven of onder de grill tot de kaas gesmolten is.
